This gluten-free peach cobbler is simple, unfussy, and the kind of dessert that doesn’t need much dressing up. The peaches do most of the work, turning sweet and syrupy as they bake, while the topping gets golden around the edges and stays tender in the middle.

I also love that this recipe is gum-free and still gives you that classic cobbler feel without making things complicated. It’s easy enough to throw together when you want something cozy, but still feels special enough to serve after dinner. For Peach Filling

5 cups peaches, sliced, fresh or frozen

⅓ cup granulated sugar

2 Tbsp cornstarch

1 Tbsp lemon juice

½ tsp vanilla extract

¼ tsp fine sea salt

For Cobbler Topping

1½ cups gluten-free all-purpose flour, no xanthan gum

¼ cup granulated sugar

1½ tsp baking powder

¼ tsp fine sea salt

6 Tbsp unsalted butter, cold and cubed

⅔ cup whole milk

1 tsp vanilla extract

Turbinado sugar, for sprinkling

Recipe Steps


Step 1

Preheat the oven to 375°F. Lightly butter an 8 x 8-inch baking dish.

Step 2

Add the peaches, granulated sugar, cornstarch, lemon juice, vanilla, and salt to the baking dish. Stir until the peaches are evenly coated, then spread into an even layer.

Step 3

In a medium bowl, whisk together the gluten-free flour, sugar, baking powder, and salt.

Step 4

Add the cold butter and work it into the flour mixture with your fingers or a pastry cutter until the mixture looks crumbly with small pieces of butter remaining.

Step 5

Pour in the milk and vanilla and gently stir until a soft, slightly thick dough forms. Do not overmix.

Step 6

Drop spoonfuls of the cobbler dough evenly over the peaches. It does not need to completely cover the fruit. Sprinkle the top lightly with turbinado sugar.

Step 6

Bake for 40–45 minutes, or until the peach filling is bubbling and the topping is golden brown.

Step 8

Let the cobbler cool for about 15–20 minutes before serving. Serve warm on its own or with vanilla ice cream.
