Now, Why This Recipe and What Makes It Special?
This loaf works because it manages to be gum-free and gluten-free without acting like it. The crumb stays tender, it slices cleanly, and you don’t have to worry about it collapsing into a pile of crumbs. The flavor is deep and cozy, thanks to the molasses, with ginger taking the lead and cinnamon keeping it warm without being overpowering. A little almond flour rounds out the texture so it’s soft but not fragile, and the oil keeps it moist enough to taste just as good the next day. It’s also a low-fuss recipe, just two bowls, a quick stir, and into the oven.
Lessons Learned
Molasses has a way of making the top look darker way before the inside is done, so you have to trust the skewer test over your eyes. At 40 minutes, my skewer still had wet batter at the bottom, so I gave it another 10 minutes and that fixed it. The batter should feel thick but still pourable not stiff. A splash of milk will loosen it if needed, while a sprinkle of almond flour can help if it’s too runny. If you don’t have foil to shield the top, parchment or even an empty baking sheet on the rack above works in a pinch to keep it from over-browning.
How to Make It Your Own
This recipe leaves plenty of room to play around with the flavors and textures. If you’re not into cloves or allspice, just leave them out and increase the ginger and cinnamon for more warmth, maybe adding a pinch of nutmeg or cardamom for a different layer of spice. The orange zest is worth keeping for a little brightness, but you could also add a quick orange glaze after baking for more of a sweet-citrus contrast. Espresso powder in the dry ingredients can make the molasses taste deeper and richer. For texture, sprinkling turbinado sugar on top before baking gives a light crunch that pairs perfectly with the softness of the crumb.
Pro Tip:
Let the batter rest for about 5–10 minutes before it goes into the oven. This gives the gluten-free flours time to hydrate, which helps the crumb bake up more evenly and improves the overall structure. It’s a small step that makes a big difference in gum-free baking. Also, if your molasses is on the thicker side, warming it for 10–15 seconds makes it blend more easily into the wet ingredients.
Summary Notes:
Baked in a 9×5-inch loaf pan at 350°F, this recipe took 50 minutes in my oven, though I started checking at 35–40 minutes. The goal is an internal temperature of 202–206°F or a skewer that comes out with just a few moist crumbs, never wet batter. The top will be dark—that’s normal—and the crumb will be tender and sliceable. It’s optional, but brushing the loaf with warm molasses or drizzling an orange glaze after cooling adds a nice finish. Wrapped airtight, it stays fresh for 2–3 days at room temperature and the flavor actually improves overnight.

Ingredients
1 cup gluten-free all-purpose flour, no gums
⅓ cup tapioca flour
⅓ cup almond flour
1 tsp baking powder
½ tsp baking soda
½ tsp fine sea salt
1 tsp ground cinnamon
1½ tsp ground ginger
¼ tsp ground allspice
⅛ tsp ground cloves
½ an orange zest
2 large eggs, room temperature
½ cup corn oil
⅓ cup unsulphured molasses
½ cup light brown sugar, packed
½ cup whole milk
1 Tbsp plain yogurt, heaped
Recipe Steps
Step 1
Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang for easy lifting.
Step 2
In a medium bowl, whisk together the gluten-free flour, tapioca flour, almond flour, baking powder, baking soda, salt, cinnamon, ginger, allspice, and cloves.
Step 3
In a large bowl, whisk the eggs, oil, molasses, brown sugar, milk, orange zest and yogurt until smooth.
Step 4
Add the dry mixture to the wet mixture in two additions, stirring gently until just combined. The batter should be thick but pourable.
Note: If the batter is too thick, add 1–2 Tbsp milk.
Step 5
Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-50 minutes, starting to check at 40 minutes. If browning too quickly, tent loosely with foil (optional). A toothpick inserted in the center should come out clean or with a few moist crumbs.
Step 6
Let the loaf rest in the pan for 10 minutes, then lift it out using the parchment overhang and transfer to a cooling rack. Cool completely before slicing.
Storage:
Store in an airtight container at room temperature for up to 3 days. Refrigerate for up to 1 week or freeze for up to 2 months. Thaw at room temperature or warm in a 300°F (150°C) oven for 10–12 minutes before serving.
